As to my feeble knowledge, casks are very important in whiskymaking. I heard that even new casks should mature, first they store some other liquid and only after a year or more can be used for keeping the noble liquid in them. (I find it interestingly parallel to the 'barrique cask', a term used in winemaking.) If somebody with deeper understanding would care to share her/his knowledge with us... /\/\iklos
