Kenneth Macdonald, one of Glenmorangie's stillmen, has the future of the whisky at his fingertips. Only when he deems the spirit passing through his glass-sided 'spirit safe' worthy of maturation, does he turn the lever to send it on its journey to the cask. His particularity means that two thirds of the final distillation is rejected and returned to the still for further refinement. But, as he observes: 'Scots fugality is one thing - good malt whisky is another.'
